gyu= bue).<\/h2>\n<h2>Le razze sono 4:<\/h2>\n<h2>\u2013\u00a0<strong>Kuroge Washu<\/strong>\u00a0(razza nera Giapponese)<\/h2>\n<h2><strong>\u2013 Nihon Tankaku Washu<\/strong>\u00a0(Shorthorn)<\/h2>\n<h2><strong>\u2013 Akage Washu<\/strong>\u00a0(razza bruna)<\/h2>\n<h2><strong>\u2013 Mukako Washu<\/strong>\u00a0(senza corna)<\/h2>\n<h2>Esistono numerose prefetture dalle quali proviene il Wagyu: Kobe (la piu\u2019 conosciuta), Hida,\u00a0<strong>Kagoshima<\/strong> (quella utilizzata per questo filetto Wagyu), Gunma, ecc..<\/h2>\n<h2>E\u2019 considerata la carne piu\u2019 pregiata al mondo per 3 principali caratteristiche: consistenza, gusto e aroma.<\/h2>\n<h2>La consistenza della struttura marmorizzata del grasso insieme all\u2019aroma del Wagyu contribuiscono al suo sapore pregiato.<\/h2>\n<h2>La qualit\u00e0 del manzo giapponese viene calcolata attraverso una scala di valori\u00a0che tiene conto del\u00a0colore della carne e del grasso ma soprattutto della marmorizzazione (o\u00a0<strong><em>marbling<\/em><\/strong>), ovvero la venatura del grasso presente nella carne.<\/h2>\n<h2>Esistono\u00a0<strong>5 gradi di
